Combine cod, potatoes, egg, 1 tablespoon melted butter, salt, pepper, onion, mustard, and lemon juice beat until smooth and fluffy. Shape lightly into 4 cakes. Sauté in oil and 1 teaspoon butter until browned. Prepare the following sauce.
Tomato Sauce:
*Melt 1 tablespoon butter add onion. Sauté until light yellow remove onion. Melt remaining 1 tablespoon butter blend in flour and brown slightly. Add tomato juice gradually and bring to a boil, stirring constantly. Boil 5 minutes, stirring. Return onion to sauce. Add salt and pepper and serve with hot codfish cakes.
Note: For more protein, double the amount of fish in recipe.
