1. In a small shallow bowl, mix flour, cheese, salt and pepper.
2. In a second small shallow bowl, mix cream and eggs until smooth.
3. Roll fish in flour mixture, then in egg mixture and back in flour mixture.
4. In a large skillet over medium-high heat, fry fish in oil and butter for 5 minutes or until golden brown, turning once. (Reduce heat if browning too quickly.) Arrange fish on a warm platter. Remove skillet from heat.
5. In a small bowl, mix lemon juice, sherry and parsley. Pour into skillet. Over medium-high heat, stir to loosen any browned bits clinging to the skillet and heat through.
6. Arrange orange slices on fish. Pour sauce over fish and serve immediately.
