Oyster Fritters

Ingredients

1 cup pancake, waffle mix
1 teaspoon baking powder
2 cups oysters, undrained
1 egg
2 tablespoons onions, finely chopped
1/4 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
1/4 cup vegetable oil

Directions:

1. Combine first 5 ingredients, mixing well add salt and pepper to taste.

2. Drop mixture by tablespoonfuls into hot oil. Fry until brown on one side turn and fry until done. Drain well on paper towels. Serve fritters hot.
