1/3 cup butter or margarine
1 broiler-fryer chicken (2 1/2 to 3 lb.), cut up
1/3 cup instant potato flakes
1 teaspoon salt
3/4 teaspoon poultry seasoning
1/4 teaspoon black pepper
Preheat oven to 375°.
Melt butter or margarine in a 13 x 9 x 2-inch baking pan (do not burn).
Pat chicken pieces dry with paper towels. With tongs, dip chicken in melted butter or margarine. Place, skin-side up, in baking pan.
In a small bowl, mix potato flakes, salt, poultry seasoning and pepper. Sprinkle over chicken.
Bake, uncovered, for 1 hour or until chicken is no longer pink when cut along bone and juices run clear. Do not turn during baking.
