Prepare the chiles. Then, chop or dice the chiles very fine and set aside. Heat the butter or oil in a medium saucepan over medium heat and cook the onion, stirring, until softened, about 3 minutes. Add the chopped chiles, salt, oregano, cumin, and cream. Bring to a boil and cook, stirring, 1 minute. Remove the pan from the heat and stir in the cheese until melted. Serve warm.
