1. Beat together eggs and water to prepare omelet mix. Refrigerate.
2. For 1 omelet, warm 1/4 cup turkey and 2 slices of bacon. Use 1 - 4 ounces ladle of omelet mix to prepare omelet. Cook, without stirring, for 3 to 4 minutes or until set, lifting edges occasionally to allow uncooked egg mixture to flow underneath. Cook until top is set but still moist. Fill with turkey, bacon and 3 slices of tomato. With pancake turner, loosen edge of omelet and fold in half.
