It is best to use a non-stick or well-seasoned skillet to prevent sticking. Use a 7-inch skillet with sloped sides for easy cooking of the egg mixture and easy removal of the finished omelet. Since omelets are quick to prepare, they are usually cooked in single-serving size.
The secret to making a great omelet is to keep the egg mixture moving while it cooks. Try not to overcook the portions that are already cooked. Total cooking time should be only about 1 minute.
Make an omelet with a filling or a topping or both. For a change, saute chopped or thinly sliced vegetables or meats in the skillet, then pour in the egg mixture and follow cooking instructions for Basic French Omelets (see above).
