1. Bake pastry shell in a preheated 425° oven 15 minutes or until golden let cool. Reduce oven temperature to 375°.
2. In a medium skillet, sauté onions in butter just until softened, but not transparent let cool.
3. In a medium bowl, beat eggs and half-and-half until blended stir in cheese, salt, 1/4 teaspoon nutmeg, and pepper until blended. Spread onions in baked pastry shell. Pour in egg mixture and sprinkle with additional nutmeg.
4. Bake 30 minutes or until set in center. Cool at least 10 minutes on a wire rack before cutting. May be served warm or cold as a light entrée or appetizer.
