1. Place eggs in a single layer in a saucepan. Cover eggs with cold water. Turn stove on to high heat and bring water to a boil. Cover saucepan and remove from burner. Wait for 15 minutes.
2. After the waiting time is over, pour off the hot water. Rinse eggs with cold water until shells feel only warm, not hot, to the touch. Add cold, icy water to the saucepan and wait for 15 minutes.
3. Peel the eggs.
Note: At higher altitudes, you will need to let the eggs sit in the boiling water longer than 15 minutes. At 6,000 feet, wait for 30 minutes.
