1. In a large bowl, stir heavy cream and onion. Mix in pork rinds set aside.
2. Place ham in a food processor bowl fitted with the metal blade. Cover and process until ground. Transfer to the large bowl along with pork and beef. Mix well. Make eight individual loaves, using about 1/2 cup of the mixture for each. Place in a shallow 2-quart baking dish. Cover and refrigerate up to 24 hours.
3. In a small bowl, mix soup, brown sugar, vinegar and dry mustard. Pour over ham loaves.
4. Bake in a preheated 350° oven for 1 hour, basting occasionally.
