1. Preheat oven to 350 degrees.
2. Mix rinds with spices and parmesan cheese in shallow bowl. Beat egg in another bowl.
3. Dip each piece of chicken in egg, then roll in crumb mixture. Lay chicken in sprayed baking dish. Bake the chicken for 35 minutes and then add about 1/4 cup tomato sauce over each breast, and sprinkle with 1/2 cup mozzarella cheese. Return to oven and bake for an additional 10 minutes (or until chicken is no longer pink).
