1. Preheat oven to 375°.
2. Melt butter in a 13 x 9 x 2-inch baking pan (do not burn).
3. Pat chicken pieces dry with paper towels. With tongs, dip chicken in melted butter. Place, skin-side up, in baking pan.
4. In a small bowl, mix potato flakes, salt, poultry seasoning and pepper. Sprinkle over chicken.
5. Bake, uncovered, for 1 hour or until chicken is no longer pink when cut along bone and juices run clear. Do not turn during baking.
