1/2 cup butter or margarine, softened
1 cup packed dark brown sugar
1 egg
1/2 teaspoon baking soda
1 tablespoon hot water
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour

In a mixing bowl, cream butter, brown sugar and egg. Stir together baking soda and water; add to creamed mixture. Add vanilla and flour; mix well. Shape into walnut-sized balls. Place on greased cookie sheets; flatten with a fork that has been dipped in water. Sprinkle with sugar. Bake at 325° for 15-20 minutes or until edges begin to brown. Cool on waxed paper.
