Place brisket in foil-lined baking dish or crock pot. Season with salt and pepper. Sprinkle with onion soup mix and pour cola and cider over top. Arrange sliced onions on top. Cover with heavy-duty foil. Bake at 375°F for 3 hours, or 6 to 8 hours on low in crock pot. Remove brisket from liquid and place on another foil-lined baking dish. Cover with barbecue sauce. Bake at 350°F for 30 to 45 minutes, basting every 15 minutes with sauce. Remove from oven and let rest 20 minutes before slicing. Make sure to slice across the grain not with the grain.
