Melt 1 tablespoon butter in large skillet. Add beef, onion and mushrooms. Cook quickly, stirring until evenly browned. The meat should, remain slightly pink in the center. Remove meat to platter. Melt 2 tablespoons butter in skillet. Add flour and stir with whisk. Gradually stir in broth whisking constantly until smooth and thick. Stir in sour cream, mustard, saIt and pepper. Add meat and cook just until heated through. Serve over noodles.
