Remove giblets and neck from turkey cavities. Wash turkey and pat dry. Fill cavities with onion slices and celery pieces. Rub turkey with butter. Place side of turkey on rack of roasting pan. Bake at 450°F for 1 hour. Turn turkey on other side and bake for 1 hour or until thermometer reads 170°F. Baste occasionally with drippings. Remove to platter and let sit 20 minutes before slicing. Pour drippings into large saucepan for gravy.
