Melt butter in electric fry pan or large skillet. Add vegetables and cook for 5 minutes, stirring occasionally. Remove vegetables. Add chicken and cook for about 3 minutes on each side to brown. Sprinkle with salt and pepper. Cover and cook on medium low for about 8 minutes until center of chicken is no longer pink. Place chicken on serving platter and pour the vegetables and drippings over top.
