Combine milk, bacon fat, 2 tablespoons brown sugar and salt heat just to melt fat in a small saucepan. Pour into a large mixer bowl cool to lukewarm. Combine yeast with remaining sugar and water let set until foamy, 5 to 10 minutes. Add to cooled milk mixture. Add eggs, flours and coriander beat for 3 minutes. Place in a greased bowl cover and let rise in a warm place, free from drafts, until doubled, about 45 minutes. Stir in bacon beat 2 minutes, then pour into two greased 1 1/2 -quart casseroles. Cover with greased waxed paper* and let rise in a warm place, free from drafts, until batter reaches tops of casseroles. Bake in a preheated 375° F oven for 35 to 40 minutes. Remove from pans cool on wire racks.
* This will prevent paper from sticking to dough.
