Blend ingredients well in a small bowl. Place in a large wide-mouth jar or nonmetallic bowl, allowing room for expansion (about double). Cover loosely and let stand in a warm place for 4 to 5 days, stirring several times daily. Starter will have a strong sour odor and should be bubbly. To use the starter, place in a large nonmetallic bowl (allowing lots of room for expansion), and extend with equal parts of flour and water. For instance, mix well 2 cups flour and 2 cups water. Cover lightly and let stand in a warm place for 12 to 24 hours, depending on how sour you want the bread to be flavored. Now you are ready to start the sourdough recipes. After using the amount needed for a recipe, place remaining extended starter in a covered jar and refrigerate for future use.
Note: A 2-cup cheese crock will store 1 to 1 1/2 cups starter very nicely.
