Preheat oven to 350°. Grease and flour two 9 x 5 x 3-inch loaf pans.
In a medium bowl, mix flour, pumpkin pie spice, baking soda and salt set aside.
In a large bowl, mix sugar and oil. Whisk in eggs one at a time. Stir in pumpkin and water until blended. Stir in flour mixture until well blended. Pour into pans.
Bake for 60 to 65 minutes or until a wooden pick inserted in center comes out clean. Cool in pans for 10 minutes. Remove from pans and cool on wire racks. Serve at room temperature.
