Heat lard or vegetable oil at least 4 inches deep to 400° F. Sift together flour, baking powder, salt and sugar. Cut in 2 tablespoons shortening or lard until resembles fine crumbs stir in enough water to form soft dough. Knead until smooth on a lightly-floured surface. Cover with a bowl and let rest 8 minutes. Divide dough in half and cover one portion with the bowl. Roll first portion to 1/8 -inch thickness and cut into 3-inch squares or desired shapes do not re-roll. Fry in preheated fat. As sopaipillas rise to surface, immediately spoon hot fat over to aid puffing continue until golden brown, turning once. Drain on paper towels and repeat procedure with second portion of dough. Keep warm in a low oven. Serve immediately with honey or sprinkle with cinnamon sugar.
