Preheat oven to 400°. Grease and flour six mini loaf pans and one 6 x 3 x 2-inch foil loaf pan.
Cut up mandarin orange segments and drain on paper towels set aside.
In a large bowl, mix together cereal and boiling water. Stir in milk, orange juice concentrate, egg, and oil until thoroughly blended set aside.
In a medium bowl, stir together flour, sugar, and baking soda. Add to cereal mixture and stir just until moistened. Gently stir in orange pieces. Fill mini pans two-thirds full. Spoon remaining batter into foil pan. Place on baking sheet.
Bake 18 to 20 minutes until a wooden pick inserted in center comes out clean. Remove from pans and serve warm or cool on wire racks. Wrap in plastic wrap, then foil.
