Using the same measurements as above, combine 1/2 cup warm water with yeast and 1 teaspoon sugar in a large mixer bowl let set until foamy, 5 to 10 minutes. Blend in remaining water. In a small bowl mix remaining 1 teaspoon sugar, 4 cups flour and salt. Beat 3 cups flour mixture into yeast mixture until smooth. Beat in remaining 1 cup flour, 1/2 cup at a time, until a soft dough forms. Turn out onto a lightly-floured surface and proceed as above for shaping and baking.
