Heat oven to 350°. Grease and flour two 7 1/2 x 3 3/4 x 2 1/4 -inch loaf pans set aside.
Finely crumble mincemeat and place in a medium bowl. Stir in buttermilk and egg set aside.
In a large bowl, mix flour, sugar, baking soda, and salt. Stir in mincemeat mixture until flour is moistened. Spread evenly in prepared pans.
Bake for 60 to 65 minutes until a wooden pick inserted in center comes out clean. Remove from pans and cool on wire racks.
Wrap and store overnight to soften crust before serving. Serve at room temperature.
*Do not substitute prepared mincemeat.
