Dissolve yeast and 1 teaspoon sugar in 1/4 cup warm water (105° to 115° F) let set until foamy, 5 to 10 minutes. In a small saucepan, heat remaining water with 3 tablespoons butter or margarine just until melted. Cool to lukewarm. In a bowl, stir together remaining sugar, salt and 1 1/2 cups flour. Add butter mixture, yeast, egg and egg yolk beat well. Add remaining flour, 1/2 cup at a time, beating well after each addition until dough is firm. Place on a lightly-floured surface and knead until smooth and elastic. Place in a greased bowl turn dough to coat surface. Cover and let rise in a warm place, free from drafts, until doubled, about 45 to 60 minutes. Punch down dough divide into two portions. Cover and let rest 5 minutes. Divide each portion of dough into six to eight balls. Shape each to make even circles pressing flat between hands. Place on a greased baking sheet press to 3 1/2 -inch circles. Cover and let rise in a warm place, free from drafts, until doubled, 30 to 40 minutes. Bake in a preheated 375° F oven for 15 to 20 minutes or until golden. Brush tops with melted butter or margarine, if desired. Remove to wire racks.
