1. In a small mixer bowl at low speed, beat cheeses for 3 minutes.
2. Add bacon, green onion and optional red pepper. Beat until well blended. Cover and chill at least 2 hours.
3. On a sheet of waxed paper, form into a 6-inch log. Remove wrap. Place on a cheese board or serving plate. Garnish with green onions and olives.
