1. Cut top from cheese with a decorative design. With a spoon carefully scoop out cheese, leaving a thin shell. Set shell aside. Finely shred cheese.
2. In a small mixer bowl at low speed, beat cheeses, heavy cream, sage and onion salt until well blended. (Mixture will not be smooth.) Pack into Gouda shell. Cover and chill.
