1. Preheat oven to 475° F.
2. Trim crusts from bread cut each slice in half lengthwise. Flatten slightly with a rolling pin. Spread with optional mustard. Cut each bacon strip in half crosswise. Place bread halves on bacon halves, matching ends. Place cheese sticks crosswise at one end. Roll up and fasten with a wooden pick. Place seam-side down on a wire rack set in a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.* Bake for 8 to 10 minutes or until bacon is crisped.
Serve hot on a warming tray with wooden picks.
* Rolls can be prepared to this step. Cover and refrigerate. Increase baking time to 12 to 15 minutes.
