1. Cut cheese into cubes. Place in a 1-quart microwavable dish or measuring cup. Add tomatoes and green chilies, onion, and salt, if desired. Cover with waxed paper. Microwave at 50% power (350 watts) 5 minutes, stirring every 2 minutes, until melted and blended. Stir in ham.
2. Transfer to a chafing dish or small slow cooker. Garnish with parsley.
To prepare on stovetop, place cheese, tomatoes and green chilies, onion, and salt in a medium saucepan. Over medium-low heat, cook until cheese is melted, stirring constantly. Stir in ham and heat through. Garnish and serve as above.
