At least 2 hours or up to 6 hours before serving:
1. In a small bowl, mix mayonnaise, mustard and pepper. Add bologna, celery and pickle blend well.
2. With a sharp knife, trim crusts from bread. With a rolling pin, flatten each slice. Spread 2 tablespoons of the bologna mixture on each slice roll as for a jelly roll. Wrap and chill at least 1 1/2 hours or until ready to serve.
Just before serving:
Cut each roll into five slices.
