1. Thinly slice top rind off Brie. Cut in half crosswise set aside.
2. In a small bowl, stir butter, chives, dill weed, parsley, and thyme until well blended. Spread on cut surface of bottom half of Brie. Top with other half of Brie. Place on a serving plate and sprinkle almonds over the top. Cover with plastic wrap and allow to warm to room temperature (about 1 hour).
NOTE: This appetizer can also be served warm by heating in the oven or serving in a chafing dish. The recipe is easily doubled.
To heat in the oven, place prepared Brie in a small ovenproof dish. Top with almonds. Bake in a preheated 400° oven 2 to 4 minutes just until cheese begins to melt. (Baking time is determined by the cheese temperature before baking.)
To serve in a chafing dish, place prepared Brie in chafing dish. Top with almonds. Set over simmering water. Serve when cheese begins to melt.
