1. Bring cheeses to room temperature. In a large mixer bowl at low speed, beat cheeses, heavy cream, green onion, paprika and hot pepper sauce until well blended. If making two balls, divide mixture in half. Cover and chill at least 3 hours or overnight.
2. Shape into one or two balls, using wet hands for final shaping. Wrap in plastic wrap and chill up to 2 weeks.
3. Remove ball from refrigerator and let ball stand for 30 minutes to soften before serving.
