1. Heat oven to 450°F. Prepare pie crust for one-crust filled pie using 9-inch pie pan. Bake at 450°F. for 5 to 8 minutes or until light brown. Reduce oven temperature to 325°F.
2. Meanwhile, in large bowl, combine margarine, sugar and eggs beat well. Add flour, lemon peel, lemon juice and milk blend well. (Mixture may look curdled.) Pour into partially baked crust. Sprinkle with nutmeg.
3. Bake at 325°F. for 40 to 45 minutes or until edge of filling begins to brown and center is almost set. Cover edge of crust with strips of foil after 15 to 20 minutes of baking to prevent excessive browning. Cool 30 minutes. Refrigerate at least 3 hours before serving. If desired, serve with whipped cream. Store in refrigerator.
