1. In medium saucepan, combine sugar, cornstarch and salt mix well. Stir in water until well blended.
2. Cook over medium heat for about 7 minutes or until mixture boils and is slightly thickened and clear, stirring constantly.
3. Remove from heat stir in lemon juice, margarine and lemon peel. Serve immediately, or cover and refrigerate until serving time. Store in refrigerator.
