This dish is traditionally made with whole chicken pieces. That adds a lot of fat and is messy to eat. My boys liked this much better with the boneless breasts. The recipe is courtesy of Joe Gallison, the fine actor who played my husband on "Days of Our Lives."
1. Sauté breasts in olive oil a few minutes per side in a large skillet over medium heat.
2. Add all remaining ingredients to skillet. Break up the tomatoes with a wooden spoon. Cover and simmer for 40 minutes.
