Here's an easy recipe for fish from Lanna Saunders, a wonderful actress and a very good cook.
1. Preheat oven to 400ºF.
2. Cut or divide fish into 4 equal portions. Place each on a square of heavy-duty aluminum foil. Top each with a slice of ginger, 1 teaspoon soy sauce, and 1 shallot or green onion.
3. Seal foil like an envelope. Bake for 10-12 minutes.
Variations
1. Use sole or other firm white fish and to each portion add 1 tablespoon fresh lemon juice and 1 tablespoon minced fresh parsley with green onion omit ginger and soy sauce.
2. Use salmon fillets with 2 tablespoons vermouth ¼ teaspoon dill ½ clove garlic, minced 1 green onion and 1 new potato, cut into small pieces, on each. For this variation, add 1 BREAD and 70 calories.)
