Here's a quick sauce to make in the microwave. The spaghetti squash is very much like spaghetti, and it has fewer calories plus good fiber. Toss the squash strands with a little sauce before serving and pass extra sauce separately. This makes a very low-calorie, filling main dish when served with Spaghetti Squash. You might also make some pasta the first time, in case the newness of the squash doesn't enjoy instant success with all your family members!
1. Place ground beef in a hard plastic colander. Place vegetables through garlic on top of meat. Place colander over a casserole dish..
2. Microwave on high for 6 minutes, stirring after 3 minutes. Discard any fat that cooks out.
3. Add remaining ingredients to meat and vegetables, place in a 3-quart casserole, and mix well.
4. Cook on high for 10 minutes. Stir and continue cooking 30-35 minutes on simmer.
5. Serve with Spaghetti Squash or pasta.
