This is always a great success with my boys. They love the lemony flavor. I've marinated this as long as 48 hours because of last minute changes in dinner plans, and it was even tastier.
1. Flatten chicken with a tenderizer or mallet to about ¼-inch thickness. Pour lemon juice over and marinate in refrigerator at least 4 hours.
2. Melt butter in a skillet over medium heat. Sauté breasts for 5 minutes on each side. Remove and place on hot platter to keep warm.
3. Pour wine into skillet, stirring. Let boil for a few minutes, then pour over chicken.
Variation:
Add 1 teaspoon ground cumin to the lemon juice.
