1. In a saucepan, heat together milk and butter or margarine, only until butter is melted. Separate eggs - the whites into a large bowl, and the yolks into a small bowl. Stir half of crumbs, salt and onion into warm milk cook, stirring over low heat until mixture thickens and starts to boil.
2. Beat yolks. Pour a little of the milk mixture into the yolks, stirring to blend. Return yolks to remaining milk mixture in pan and cook slowly. stirring constantly, until the mixture comes to a boil. Remove from heat.
3. Beat egg whites stiff but not dry. Fold milk mixture into egg whites. Fold in remaining cracker crumbs. Pour into ungreased 1 1/2 quart casserole. Bake at 300°F for 1 1/4 hours. Serve with chili sauce or cheese sauce.
