1. Remove large leaves and tough outer spines from cauliflower. Place whole cauliflower in a large kettle. Add boiling water to come halfway up sides of cauliflower, and sprinkle with salt. Cover and cook 15 to 20 minutes, or until tender but not falling apart. Carefully remove to heated platter.
2. Meanwhile, melt butter or margarine in skillet. Add grated onion and cracker crumbs. Stir mixture until bubbling hot and crumbs are a deep golden brown. Stir in lemon rind and juice. Pour over cauliflower.
3. Serve with lamb chops, hamburger or other meat on platter with broiled tomatoes.
