Treat your biscuits gently over handling can toughen the dough. The amount of liquid you need varies slightly depending on the moisture content of the flour, which in turn depends on environment and weather. Add the liquid a little at a time, gently stirring all the while with a fork. When the mixture no longer sticks to the sides of the bowl and forms a soft dough, you have added enough liquid.
Turn the dough onto a floured work surface and knead gently about 10 times, or just enough to smooth the dough slightly and remove any stickiness.
Cut the dough with a sharp knife or biscuit cutter dipped in flour the traditional drinking-glass method can squash the sides and prevent proper rising.
