The crust is often the most coveted part of homemade bread. Try these techniques for yeast breads:
* Crisp crust: Brush loaf gently before baking with water. Cool loaf completely before wrapping.
* Shiny crust: Brush loaf gently before baking with 1 beaten egg combined with 1 tablespoon water. If desired, sprinkle with sesame seed, poppy seed or coarse salt.
* Soft, tender crust: Brush loaf gently before or after baking with milk or melted butter.
* Glaze for a sweeter loaf, such as Cracked Wheat Raisin Bread (page 44): Brush the warm baked loaf with melted jelly or a mixture of powdered sugar and milk.
