Make sure the milk and eggs are at room temperature before you begin mixing. If you’re in a hurry, you can take the chill off the milk by briefly heating on low in the microwave and setting the eggs into a bowl of warm water before cracking them.
After the popovers bake for 15 minutes in a hot 450°F. oven, reduce the oven temperature to 350°F. Don’t even think about opening the oven at this point wait until at least 25 more minutes have passed.
Perfect popovers have deep golden-brown crusty shells and moist, hollow interiors, perfect for serving plain with butter or for filling with a sauce, stew or salad.
