Yeast dough likes a warm, cozy, draft-free place while it’s stretching and rising to double its size. One easy way to control the environment: Bring a pan of water to a boil and place the pan on the bottom rack of an unheated oven. Cover the dough with lightly greased plastic wrap and place it on the top oven rack. Shut the oven door. If the oven is otherwise occupied, place a baking rack over a pan of hot water and set the bowl of dough on top of the rack, covered with lightly greased plastic wrap and a towel.
