Mix batter gently for tender pancakes. Before cooking the first pancake, heat the ungreased griddle or skillet to 375 to 400°F. (medium-high). When the griddle has reached the right temperature, a drop of water flicked onto the surface will dance around before evaporating.
Grease the griddle lightly. This is usually only necessary for the first batch of pancakes.
Turn pancakes only once, when the top starts to bubble and the edges are dry.
Thick batter makes thick, puffy pancakes. If you prefer thinner pancakes, add more liquid to the batter.
