1. Heat oil in large saucepan or Dutch oven over medium heat until hot. Add zucchini, onion, carrot and garlic cook and stir 3 minutes or until onion is tender.
2. Add cabbage cook and stir 2 minutes or until cabbage is tender.
3. Stir in all remaining ingredients. Bring to a boil. Reduce heat to low cover and simmer 10 minutes to blend flavors.
