Before using yeast, check the expiration date on the package. If in doubt, you can check the yeast: Dissolve the yeast, along with up to a tablespoon of the recipe’s sugar (but no salt) in 1/2 cup of the recipe’s liquid that has been heated to lukewarm, 90 to 100°F. (A drop of the liquid on the inside of your wrist should feel neither very warm nor very cool but about the same temperature as your skin.) Let the mixture stand at room temperature for about 10 minutes if the mixture is foamy, the yeast is still active and you can proceed with the recipe.
