Heavy, sluggish dough that doesn’t rise may be due to expired yeast, excessive salt, lack of sugar or dough that is too hot or too cold. Of these problems, only the last one can be rectified, by warming the dough just enough to encourage rising. If too much salt or a too-hot liquid has killed the yeast, it’s best to start over.
