1. Preheat oven to 375°. Place roast, fat-side up, on a rack in a shallow roasting pan. Do not add water. Do not cover. Roast for 1 hour. Turn oven off, do not open oven door. Let stand for up to 4 hours.
2. Turn oven back on to 375°. Roast for 40 minutes. Remove to serving dish and let stand for 10 to 15 minutes before carving.
