To microwave, ar-range fresh vegeta-bles in a microwave- safe dish with thicker portions toward the outside of the dish. Add 2 to 3 tablespoons of water and cover the dish with a lid or plastic wrap. Microwave the vegetables on high, stirring, rearranging or turning them halfway through cooking. Remove them at the minimum time and check for doneness.
